Crab Stuffed Twice-baked Potatoes

Ingredients:

Directions:

  1. You can micro potatoes however I find oven baking
  2. Gives a firmer skin
  3. Bake remove from oven and cool slightly
  4. Remove potato from skins and place in bowl
  5. Mash roughly and add crab and cheese and fluff with fork
  6. In heated pan melt butter and add pepper onion and garlic; salt and pepper
  7. Cook just until softened
  8. Add to potato/crab mixture
  9. Mix gently
  10. Place mixture in the six potato skins
  11. Heat oven to 325
  12. Place potatoes on cookie sheet and heat in oven
  13. Serve with dollop of sour cream on top with fresh chopped parsley (optional)
