Crab and Goat Cheese Omelet

Ingredients:

Directions:

  1. In a large mixing bowl, lightly scramble the eggs and the half-n-half. Season with salt and pepper to taste. Set aside.
  2. In a medium sized nonstick sauté pan, melt the butter on medium heat.
  3. Scatter a serving portion of the crabmeat in the pan and let cook for one minute.
  4. Stir the egg mixture and add on a portion of the egg mixture, enough to cover the bottom of the pan.
  5. Let cook on medium heat for about 2 to 3 minutes.
  6. Add some goat cheese and cilantro and using a spatula, fold the omelet covering the cheese.
  7. Cook for one minute and remove and serve.
  8. Repeat the above until all ingredients are used.
