Couscous With Asparagus and Lime

Ingredients:

Directions:

  1. Wash and cut asparagus into 1 lengths. Heat vegetable broth in a medium saucepan over high heat.
  2. While broth is heating, place couscous in a large bowl. Once broth comes to a boil, pour it into bowl with couscous and stir. Cover bowl and set aside.
  3. Add 4 cups of water to the saucepan and bring to a boil. Add 1/2 teaspoon of salt, asparagus and onions. Cook for 2 minutes.
  4. Remove from heat, and drain water. Add asparagus and onions to the couscous.
  5. Add the remaining salt and other ingredients to the couscous. Mix well. Taste and adjust seasonings as desired.
  6. Chill for at least 1 hour, and keep chilled until ready to serve if eating as a salad, or eat immediately warm.
