Cornish Game Hens With Creamy Orange Sauce

Ingredients:

  • 2 (1 1/4 lb) cornish hens
  • salt , for cavity
  • 2 tbsp butter
  • 2 tbsp flour
  • 1/4 tsp grated ginger
  • 1 cup milk

Directions:

  1. Preheat oven to 350*.
  2. Rinse hens and salt the cavity and outside of birds.
  3. Place in a shallow, oiled baking pan.
  4. Brush hens with 2 TBS melted butter.
  5. Bake in 350* oven for an hour, until golden brown.
  6. Brush hens with 1/4 cup of the orange marmalade and bake an additional 10 minutes.
  7. To make the sauce, melt 2 TBS butter in a small saucepan, over medium heat.
  8. Stir in flour and ginger, then gradually add the milk.
  9. Cook over medium heat, stiring constantly, until mixture just comes to a boil and thickens.
  10. Remove from the heat.
  11. Stir in the remaining 1/2 cup marmalade, then pour the sauce over the game hens.
