Directions:

  1. In a bowl combine corn and rice then add onion, jalapeno and cilantro.
  2. In separate bowl combine oil, lime juice, mayonnaise, salt and pepper and blend until creamy.
  3. Pour over corn and mix to coat thoroughly then cover and refrigerate then serve on lettuce.
