Cool Beet Salad

Ingredients:

  • 1/2 cup orange juice
  • 1/2 cup apricot jam
  • 1/4 tsp black pepper
  • 3 cups baby greens or mesculin

Directions:

  1. Wash the beets well to remove any dirt and place in a oven proof dish and cover with a lid or foil and bake at 325 for about one hour depending on the size of the beets. Small beets about the size of large radishes are ideal but larger are fine, just cut them in half. I grow a variety of beets from white to candy cane. When they start to give to a little pressure take out and run under cool running water with gloves on your hands (prevents red hands) and remove the peels and let these chill in the refrigerator. Mix the juice with the jam and heat if it is does not want to mix in well. I microwave for about one minute and blend well. I mix the two in a small jar. Works great. Place the greens on pretty salad plates and top with beets and cover with the dressing and top with pepper if desired.
