Ingredients:

Directions:

  1. Wash greens well.
  2. Remove any tough stems.
  3. Cut into shreds.
  4. Heat oil in large soup pot, heavy bottom.
  5. Add onion and turkey wings, cook five minutes.
  6. Add garlic and hands full of collards.
  7. Using tongs keep turning the wilted greens from the bottom to the top to cook evenly.
  8. When the greens are mostly wilted, add water and seasonings (except the canadian bacon and vinegar), turn the heat to very low and cook for two hours.
  9. Remove the wings from the pot. Discard
  10. Serve family style in a large bowl, top with vinegar and bacon.
