Cod Croquettes With Tartar Sauce

Ingredients:

Directions:

  1. Mix mayo,relish, lemon juice and tabasco together. Set aside.
  2. Poach cod fillets and let cool.
  3. Flake cod into bowl.
  4. Saute carrots,scallions,and celery in melted butter ans season to taste with salt and pepper.
  5. Add vegetables to cod.
  6. Add egg, 1/2 cup breadcrumbs, old bay seasoning, salt and pepper. Mix together well.
  7. Form into patties.
  8. Roll patties around in remaining breadcrumbs.
  9. Heat oil in skillet.
  10. Place patties in oil and fry on both sides until brown.
  11. Serve with tartar sauce.
  12. (if you prefer to bake them, spritz top of each croquette with a little oil and bake at 375 unitl brown and crispy).
