Coconut Peanut Butter Cups

Ingredients:

  • 1/2 cup of granulated sugar
  • 1 large egg
  • 2 cups of flaked coconut
  • fifty 1 1/4 inch paper baking cups

Directions:

  1. Preheat oven to 325F.
  2. Place paper baking cups on cookie sheet.
  3. Set aside.
  4. Combine the peanut butter, sugar and egg in mixing bowl.
  5. Blend thoroughly with an electric mixer on low speed.
  6. Press 1 1/2 teaspoons of this mixture into the bottom of each paper cup.
  7. In a separate bowl, combine the sweetened condensed milk and coconut.
  8. Mix well with a wooden spoon.
  9. Add one teaspoonful of the coconut mixture on top of the peanut butter mixture in each cup.
  10. Bake for 20 minutes, until the tops are lightly browned.
  11. Remove from the oven.
  12. Cool on a wire rack.
  13. Remove from paper cups.
  14. Store in a cool place.
