Classic Homemade Chicken Broth Base

Ingredients:

  • 1 chicken carcass after roasting a chicken (or an old laying hen)
  • 10 cups water
  • 1 large carrot
  • 1 celery rib
  • 2-4 cloves garlic
  • 1 tsp thyme
  • 1 tsp salt
  • 1/4 tsp pepper

Directions:

  1. Chop vegetables coarsely and throw everything in the pot
  2. Bring to a boil and simmer uncovered on med-low for 1.5 to 2 hours
  3. Allow to cool
  4. Pour through strainer and freeze in heavy duty 2 cup freezer bags
  5. Yields approx 8 cups
  6. Use as base for soups, sauces and stews
