Classic French Onion Soup

Ingredients:

  • 1 kg of finely chopped onions
  • 100-150 g of good quality butter
  • tablespn of fresh sage chopped finely
  • tablespn of fresh thyme as above
  • 1 large glass of dry white wine
  • 1-1.5 tsp litres of good beef stock
  • salt n pepper to taste

Directions:

  1. Melt butter in a heavy bottomed saucepan and add onions-stew on a medium high heat for 10/15 mins or until onions are clear-keep stirring occasionally -careful NOT to burn
  2. Add garlic and herbs. lower heat and stew for another 20 mins stirring to ensure it isn't buring or sticking to bottom
  3. Turn up heat for a moment and add wine until it has reduced by 50 percent. Add hot stock and turn down heat -simmer for another 30 mins
  4. Salt and pepper to taste
