Ingredients:

  • 1 1/2 cup lentils, dry
  • 1/2 cup carrot, diced
  • 1/2 cup onion, diced
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 8 cups water

Directions:

  1. Put everything into a soup pot
  2. Bring to a boil
  3. Reduce to a slow simmer
  4. Cover and cook for 1 hour
  5. Taste and adjust seasoning as needed
