Ingredients:

Directions:

  1. Place sweet potatoes in a large sauce pan and cover with water; bring to a boil.
  2. Reduce heat; cover and simmer for 40 to 45 minutes or until tender.
  3. Drain and cool.
  4. Cut into 1/2 inch slices.
  5. Place in a greased 13 x 9 x 2 baking dish.
  6. In a small saucepan, combine brown sugar and cornstarch.
  7. Whisk in orange juice concentrate and lemon zest.
  8. Bring to a boil; cook and stir for 1 to 2 minutes or until thickened.
  9. Pour over sweet potatoes.
  10. Sprinkle with pecans.
  11. Bake, uncovered at 325 degrees until heat through and sauce is bubbly.
