Ingredients:

  • 1 1/2 cups flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 1/2 tsp cinnamon
  • 1 cup quick oats
  • 3/4 cup brown sugar
  • 3/4 cup raisins
  • 1/4 cup apple juice
  • 1 1/4 cups applesauce
  • 1/4 cup vegetable oil
  • 2 tbsp flax seeds (mixed with 6 tbsp water)
  • 1/4 cup soymilk or 1/4 cup rice milk

Directions:

  1. Preheat oven to 350°F.
  2. Grease and flour or spray an 8 1/2 x 4 & 1/2 loaf pan.
  3. Soak raisins in apple juice.
  4. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, oats, and brown sugar.
  5. Add applesauce, oil, flax slurry, and soymilk. Stir until just combined.
  6. Mix in raisins and juice.
  7. Pour batter into prepared pan.
  8. Bake for 50 - 60 minutes, or until a knife comes out clean.
  9. Remove from pan and let cool.
