Christmas Morning Cranberry Orange Cake

Ingredients:

Directions:

  1. In large bowl, mix together first 5 ingredients
  2. Add nuts, dates*, cranberries, and orange rind
  3. In medium bowl, whisk eggs until beaten
  4. Whisk milk and oil into beaten eggs, combining all
  5. Add to flour, fruit mixture
  6. Stir until blended
  7. Pour into well-greased 10 inch tube pan
  8. Bake 1 hour at 350 degrees
  9. Let stand until partially cool
  10. Remove cake from pan, and place on rack that has been placed over wide dish
  11. Combine sugar and orange juice
  12. Heat in microwave until sugar has dissolved
  13. Pour over warm cake
  14. Continue to pour over cake until all juice has been absorbed
  15. Turn cake upside-down to coat underside also
  16. Cool thoroughly
  17. Wrap in foil and refrigerate 24 hours before serving.
  18. It is supposed to last for 2 weeks in refrigerator, but the longest it has ever lasted at my house is about 2 days!!
  19. *NOTE: I LOVE DATES, BUT I PREFER THIS ONE WITH CRANBERRIES ONLY
