Chocolate Glazed Baileys Irish Cream Cheesecake

Ingredients:

  1. Cheesecake: Heat oven to 350°. Finely grind graham crackers in a blender or processor. Add butter and blend until combined. Press into the bottom of a 9 spring form pan. Bake crust until golden brown, about 8 minutes. Cool. Using an electric mixer, beat cream cheese and sugar in a large bowl till smooth. Beat in flour. Add eggs 1 at a time, beating just until combined. Mix in remaining ingredients. Pour filling into crust. Bake 10 minutes at 350°, reduce oven to 250° and bake until set, about 40 minutes longer. Cool cake on rack for 10 minutes. Run a sharp knife around pan to loosen sides. Cool. Chill overnight. Follow instructions for glaze below.
  2. Glaze: Heat cream in medium saucepan, but do not boil. Reduce heat to low and add chocolate chips, stir until melted and smooth. Cool glaze to lukewarm. Release sides from cheesecake and place on rack over baking sheet. Pour glaze over cheesecake and spread with a spatula to cover top, allowing excess to drip onto sheet. Refrigerate to allow glaze to set.
