Ingredients:

  • ( candy ).
  • 3/4 cup. mashed potatoes (homemade are the best.. no spices or milk..
  • 1 tsp. vanilla or almond extract (i''m allergic to almonds that are
  • concentrated in any way)
  • (coating).
  • 1/8 bar of paraffin (for added glossiness)
  • melted in double boiler.

Directions:

  1. Candy)
  2. Mix all ingredients together.
  3. Drop by heaping teaspoons onto waxed paper (refrigerate for an hour if you cannot roll into balls.)
  4. Roll into balls and refrigerate until firm and can withstand dipping.
  5. ( I usually refrigerate twice.. before rolling.. And after rolling. I’ve even covered and left over night after rolling then dipped the next day.)
  6. (Coating)….
  7. In a double boiler melt chocolate and paraffin to smooth & glossy.
  8. Dip, making sure all sides are covered.. I use a fork.. Then let set-up.. Can put in chill chest at this point.. Even overnight.. These candies freeze very well..and are first sellers at craft shows and bake sales..
  9. Remember… Warn people that there is Coconut in these!!! Enjoy…!!!!
