Chocolate Chip Mint Cookies

Ingredients:

  • 150 g margarine or 150 g butter
  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 1/2 tsp peppermint extract (adjust according to personal preference)
  • 1 1/2 cups flour
  • 1/4 cup cocoa
  • 1/4 tsp salt

Directions:

  1. Preheat oven to 175C Cream butter and sugars.
  2. Beat in egg.
  3. Stir in vanilla and peppermint.
  4. Sift together dry ingredients and add to creamed mixure until combined.
  5. Stir in chocolate chips.
  6. Roll into balls and place on paper-lined baking tray.
  7. Bake for 10-12 minutes.
