Chocolate Cherry Muffins

Ingredients:

  • 2 1/2 cups flour
  • 1 cup plus 2 tbsp sugar, divided
  • 1/2 cup plus2 tbsp cocoa
  • 1 tsp salt
  • 3/4 cup butter
  • about 1 cup milk
  • 2 cups frozen presweetened tart cherries, thawed and drained

Directions:

  1. Preheat oven to 350 degrees. Grease or line 16 muffin cups.
  2. In a large bowl, mix flour, 1 cup sugar, cocoa, baking powder, baking soda and salt. Cut in the butter with a pastry blender.
  3. Measure the beaten eggs, then add enough milk to make 11/2 cups total liquid. Stir milk and eggs into flour mixture. Then add chips and cherries, stirring only until all ingredients are combined.
  4. Fill muffin cups almost full. Sprinkle remaining sugar on top of muffins. Bake 20-30 minutes or until a toothpick inserted in the middle comes out clean. If using greased muffin tins, allow muffins to cool almost completely before removing.
