Chinese Chicken with Sweet Onions

Ingredients:

Directions:

  1. Cut chicken into 1/2-inch cubes.
  2. Clean bell pepper; cut into 1-inch chunks.
  3. Quarter onions and slice thinly.
  4. In wok, heat 2 tablespoons corn oil until it begins to smoke.
  5. Add ginger, cayenne and chicken.
  6. Stir-fry until chicken is thoroughly cooked, about 3 minutes.
  7. Remove to serving dish.
  8. Add remaining corn oil; heat.
  9. Add onions and pepper; stir-fry until onion is slightly transparent.
  10. Return chicken to pan; add soy and sherry.
  11. Stir 1 minute more.
  12. Sprinkle with sesame hot oil.
  13. Serve with rice.
