Chicken with Pepperoni and Spinach

Ingredients:

Directions:

  1. Heat the olive oil in a pan and stir in the onion and garlic.
  2. Cook for several minutes, until the onion is soft.
  3. Stir in the pepperoni and cook for another couple minutes, then add the the chicken.
  4. Cook until brown and then add the chopped tomatoes.
  5. Season with salt and pepper and simmer for about 10 minutes, until the chicken is cooked through.
  6. Meanwhile, shred the spinach and coarsely chop the coriander.
  7. If the stew is looking dry, add a bit of water and reduce the heat.
  8. Stir in the spinach and allow it to wilt, then add the coriander.
  9. Serve over a short pasta, such as penne, or with boiled rice.
