Ingredients:

Directions:

  1. Saute onions, peppers and garlic in oil.
  2. Add chopped tomatoes and the tomato paste, cook approximately 5- 10 minutes.
  3. Remove from pan.
  4. Add pieces of chicken and brown thoroughly in oil.
  5. Return the tomato mixture to the pan along with the remaining ingredients.
  6. Simmer for 1 hour or until chicken is tender.
  7. Serve over rice.
