  1. Peel ginger and cut into 1/8 -thick matchsticks to measure 1/2 cup. Soak in cold water 10 mins;drain Heat oil in skillet over high heat,brown chicken in 2 batches,6-8 mins. Set aside. In same skillet over medium heat ,cook ginger,onion and garlic,stirring until browned,8-10 mins. Add soy sauce,white vinegar and sugar,cook over high heat until thick,3-4 mins. Add chicken,stir to warm. Remove from heat;stir in scallions.
