  1. To make caramel sauce cook sugar in heavy pan until brown when starts to brown take of heat add fish sauce it will bubble and splatter so watch out not to burn yourself return to heat untill sugar dissolves add shollots
  2. Arrange chicken in large saucepan pour over caramel sauce bring to boil
  3. Cover pan reduce to simmer and stir every now and again for about 40
  4. Min until sauce thickens slightly
