Ingredients:

Directions:

  1. Heat oil in large skillet over medium-high heat.
  2. Beat eggs in medium bowl.
  3. Mix four with salt and spread out in a shallow dish.
  4. Dip each chicken breast in the the egg, then the flour, shaking off any excess.
  5. Fry 2 -4 minutes on each side until chicken breasts are golden brown and cooked through.
  6. Transfer chicken to a plate.
  7. Add apple juice to the skillet, scraping up any browned bits from the bottom. let apple juice cook several minutes until it is reduced by half.
  8. Add lemon juice and butter to the skillet.
  9. When butter melts, return chicken to the pan, spooning over to coat chicken.
