Chicken and Wild Rice Casserole

Ingredients:

  • 2 tbsp margarine
  • 1 tbsp olive oil
  • 2 cooking spray
  • 1 large onion
  • 4 cloves garlic
  • 14 oz mushrooms
  • 2 tbsp flour
  • 1 1/2 cups skim milk
  • 1/2 cup water

Directions:

  1. Saute onion in butter & cooking spray until almost soft
  2. Add olive oil, mushrooms, and garlic and saute until almost soft
  3. Add flour and saute about 2 minutes
  4. Add milk and water and simmer about 2 minutes
  5. Combine onion/mushroom mixture, rice, and chicken in a 9 x 13 casserole
  6. Bake at 350 about 20 minutes, until bubbling and beginning to brown on top
  7. Personally, I like to serve this with peas mixed in, but not everyone likes peas!
