Chicken and Wild Rice Casserole

a lighter version of my gramma's favorite casserole
Ingredients:
2 1/2 cups chicken breast, cooked & chopped
6 ounces wild rice, cooked
2 tbsp margarine
1 tbsp olive oil
2 cooking spray
1 large onion
4 cloves garlic
14 ounces mushrooms
2 tbsp flour
1 1/2 cups skim milk
1/2 cup water
Directions:
1. saute onion in butter & cooking spray until almost soft
2. add olive oil, mushrooms, and garlic and saute until almost soft
3. add flour and saute about 2 minutes
4. add milk and water and simmer about 2 minutes
5. combine onion/mushroom mixture, rice, and chicken in a 9 x 13 casserole
6. bake at 350 about 20 minutes, until bubbling and beginning to brown on top
7. personally, I like to serve this with peas mixed in, but not everyone likes peas!
