Ingredients:

Directions:

  1. Melt butter or oil in fry pan.
  2. Brown chicken breasts and remove to plate.
  3. Deglaze pan with chicken broth.
  4. Add vinegar, sugar, cajun spice and pepper.
  5. Simmer on medium heat for a minute or two.
  6. Drain pineapple and reserve tidbits.
  7. Set aside.
  8. Put cornstarch in pineapple juice and stir.
  9. Add to fry pan to thicken chicken broth.
  10. Stirring often.
  11. At this point put chicken back in pan,cover and simmer for 10 minutes.
  12. Turn chicken and add celery.
  13. Stir.
  14. Simmer another 5 minutes and add peppers and snow peas.
  15. Stir.
  16. Simmer another 5 minutes till vegetables are tender crisp.
  17. Stir in reserved pineapple.
  18. Serve over white or brown rice.
  19. Garnish with sliced green onions and sprinkle with soya sauce.
