Chicken and Homemade Noodles

Ingredients:

  • 2 eggs
  • 1 tsp salt
  • 1 tsp oil
  • 1/2 tsp baking powder

Directions:

  1. Place chicken in large pot or dutch oven. Cover with water (about 2 quarts).
  2. Bring water to a boil, then lower heat to simmer and cook chicken for about 2-1/2 hours.
  3. While Chicken is cooking - in a separate bowl - mix remaining ingredients and add enough flour to make dough stiff enough to roll out.
  4. Knead and roll out dough thinly. Cut into 1/4 wide strips. Dry well.
  5. When chicken is cooked, remove from broth, cool and de-bone.
  6. Add chicken meat and noodles back into broth.
  7. Bring to a boil and cook for 15 minutes.
