Ingredients:

Directions:

  1. Bring a large pot of salted water to a boil.
  2. In a large bowl, combine the pumpkin, egg, salt, nutmeg, and baking powder.
  3. Blend well.
  4. Add flour.
  5. The dough should be soft.
  6. Dip a 1/2 teaspoon measure into the boiling water.
  7. Scoop up a generous 1/2 teaspoon of the dough.
  8. Drop dough into boiling water.
  9. Repeat until all of dough is used.
  10. Be sure to always dip the 1/2 teaspoon measure into the boiling water before scooping up the dough.
  11. Boil dumplings about 10 minutes.
  12. Transfer to a colander with a slotted spoon to drain.
  13. In a large skillet, melt the 3 tablespoons butter over medium heat.
  14. Add the dumplings and saute until beginning to brown, about 8 minutes.
  15. Transfer to a serving dish and sprinkle with the Parmesan.
  16. Serve.
