Chewy Ginger Button Biscuits

Ingredients:

  • 60 g butter
  • 1/2 cup golden syrup
  • 1/4 cup honey
  • 1 3/4 cup plain flour
  • 1 tsp bicarb soda
  • about 10 squares melted dark chocolate

Directions:

  1. - Melt butter in a saucepan over medium heat.
  2. - Increase heat to high and add golden syrup and honey. Bring to the boil, then remove from heat, pour into a large mixing bowl and allow to cool 10 minutes.
  3. - Sift the remaining ingredients (except chocolate) into the butter mixture. Stir until well combined. Cover and set aside for an hour or so, until dough is firm.
  4. - Preheat oven to 180ºc.
  5. - Roll dough into walnut-sized balls and place on a baking tray, about 3 cm apart. Flatten balls with the back of a spoon.
  6. - Bake for 7-10 minutes, until golden brown. Allow to cool on tray.
  7. - When cool, dip the bottoms in melted chocolate and allow to set on a chilled, baking paper lined baking tray.
