Cherry Ricotta Muffins

Ingredients:

  • 2 cup flour
  • 3/4 tsp salt
  • 2 1/4 tsp baking powder
  • 3/16 tsp baking soda
  • 1/4 cup brown sugar
  • 3/4 cup sugar
  • 1 1/2 cup ricotta cheese
  • 1 1/2 cup buttermilk
  • 3 eggs
  • 1 1/2 tbsp lemon juice
  • 1 tbsp vanilla
  • 2 1/4 cup cherries -- not defrosted if frozen; pitted and sliced; or 1 cup dried cherries

Directions:

  1. Heat oven to 350.
  2. Spray 12 muffin cups.
  3. Combine flour through sugar.
  4. Beat buttermilk into ricotta in separate bowl, add eggs, whisking in one at a time.
  5. Beat in lemon juice, vanilla and almond extracts.
  6. Pour with butter and cherries into flour, fold in just until moistened.
  7. Scoop into muffin cups.
  8. Bake until tester is clean, 20-25 mins.
  9. Cool on rack.
