Cheesy Bacon And Leek Mashed Potatoes

Ingredients:

Directions:

  1. Boil potatoes until fork tender
  2. Saute leeks in butter
  3. Drain and mash potatoes leaving them slightly lumpy
  4. Mix potatoes, leeks and salt/pepper and put into a 2 quart cassarole
  5. Top with cheese and bacon
  6. Bake at 400F for 15 min or until cheese is bubblely and golden
