Cheesecake With Applesauce And Toasted Almonds

Ingredients:

  • crust
  • 1/4 cup sugar
  • 2/3 cup firm butter cut in small pieces
  • 1/2 tsp of vanilla extract
  • filling
  • 1 cup sour cream
  • 2/3 cup sugar
  • topping
  • 3/4 cup applesauce
  • 3/4 cup slivered almonds

Directions:

  1. CRUST
  2. To prepare crust, sift flour into a large bowl, add sugar and vanilla. add butter cut in squares, add and mix until mixture resembles coarse bread crumbs.
  3. Add egg and work to form a smooth dough.
  4. Do not overwork.
  5. Place dough in a plastic bag and refrigerate 30 min.
  6. Preheat oven to 475F. Grease a 8-inch springform pan.
  7. On a lightly floured surface roll dough to a 1/4 inch thickness.
  8. Line greased pan with dough. Set aside.
  9. FILLING
  10. Beat cream cheese, sour cream,sugar, flour and egg yolks and whites in a large bowl.
  11. Stir in vanilla and beat until smooth.
  12. Spoon filling into prepared crust..
  13. With a pipe cover cheese filling with the applesauce.
  14. Add slivered almonds.
  15. Bake for 50 minutes or more if necessary.
  16. If you want you can sift some powder sugar when the cheesecake is completely cool.
