Cheese and Olive Cigarillos With Citrus Mayo

Ingredients:

Directions:

  1. Heat oil in a pan.
  2. Add onion, garlic and celery.
  3. Stir-fry till the onions are transparent.
  4. Fold in the cooked rice.
  5. Season it and allow it to cool.
  6. Fold in both the grated cheese, chopped olives and chives.
  7. Shape this mixture like thin cigars.
  8. Knead together the cornflour and refined flour adding water as is required to prepare the batter.
  9. Dip the cigar shapes in the batter.
  10. Coat with breadcrumbs.
  11. Heat oil in a wok and deep fry these until golden brown.
  12. To prepare the dip, simply fold in all the ingredients in a bowl and serve alongside the dish.
