Charleston Breakfast Casserole

Ingredients:

  • 12 slices bacon
  • 3- cups croutons
  • 6 eggs
  • 1 3/4- cups milk
  • 1 bel pepper, diced
  • salt and pepper to taste

Directions:

  1. Fry bacon, drain and crumble.
  2. Set aside.
  3. Preheat oven to 325 degrees.
  4. Melt butter in microwave.
  5. Spray a 9X12-in baking dish with Pam.
  6. Place croutons in the bottom of the dish, and drizzle with melted butter.
  7. Sprinkle with the shredded cheddar cheese.
  8. Crack the eggs into a bowl, whisking to break up the yolks.
  9. Add milk, pepper, mustard, salt and pepper, and beat until well-combined.
  10. Pour over the croutons and cheese and sprinkle with crumbled bacon.
  11. Bake in the preheated oven for 40 minutes.
  12. Remove from oven and let stand for 10 minute before serving.
