Cauliflower With Marigold Sauce

Ingredients:

  • 1 medium cauliflower
  • 1/4 cup butter
  • 1/2 cup white flour
  • 1 1/4 cups milk
  • 6 heads calendula flowers
  • salt and pepper

Directions:

  1. Break up the cauliflower into large florets.
  2. Steam 10 to 15 minutes, until cooked but not too soft.
  3. In a saucepan, melt butter.
  4. Add flour until a roux is formed (soft paste).
  5. Slowly add milk, whisking to keep smooth.
  6. Turn down the heat to low and simmer for about 5-10 minutes to thicken sauce.
  7. Stir in grated cheese, not allowing to boil.
  8. Remove from heat, and add in the marigold petals.
  9. Stir carefully.
  10. Place the cauliflower into a serving dish and pour the sauce over the top.
  11. Serves 4.
