Ingredients:

Directions:

  1. Put cauliflower and chicken stock in a medium sized stock pot and cook over medium high heat (gentle boil) until soft and tender about 12 minutes.
  2. Put cauliflower into a blender with 1/3 cup of the cooking liquid and blend until smooth. Add more of the cooking liquid of you want it looser. Salt and pepper to taste.
  3. I find this always needs more salt than I think. Keep tasting and add a little bit of salt at a time and mix thoroughly. It will taste bland and all of a sudden with the right amount of salt it will be delicious.
