Ingredients:

  • 1 1/2 lbs carrots
  • 1 cup sugar
  • 1/2 tbsp baking powder
  • 1 tsp vanilla
  • 1/8 cup flour
  • 3 eggs

Directions:

  1. Steam carrots until tender
  2. Process in food processor
  3. Combine with sugar, baking powder and vanilla in a bowl.
  4. Stir in flour.
  5. Add eggs and smart balance (melted)
  6. Mix well and pour into sprayed 9x13 pan.
  7. Bake at 350 F until set on top (about 45 min)
