The absolute BEST carrot recipe I've ever had! Should not be eaten too often, as it's high in sugar and cholesterol. This can be eaten as a dessert, it's so good!
Ingredients:
1 1/2 lbs carrots
1 cup sugar
1/2 tbsp baking powder
1 tsp vanilla
1/8 cup flour
3 eggs
113 grams smart balance butter
Directions:
1. steam carrots until tender
2. process in food processor
3. combine with sugar, baking powder and vanilla in a bowl.
4. stir in flour.
5. add eggs and smart balance (melted)
6. mix well and pour into sprayed 9x13 pan.
7. bake at 350 F until set on top (about 45 min)
