Ingredients:

  • 2 lbs carrots
  • 1 cup sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1 tsp salt

Directions:

  1. Preheat oven to 400°F.
  2. Cook peeled carrots until soft.
  3. Place in food processor; add remaining ingredients and process until smooth.
  4. Bake for about 30 minutes.
