Ingredients:

Directions:

  1. Preheat oven to 350°
  2. Pam an 8 square baking dish or a 1 qt souffle type dish.
  3. Cook carrots in salted water until done. The should no longer have any hardness to them.
  4. Drain the carrots.
  5. Place butter, eggs, baking powder, sugar and vanilla in a food processor or blender. Add carrots a little at a time and puree.
  6. Pour into prepared baking dish.
  7. Bake for 45 minutes or until set. Let stand 5 minutes before serving.
  8. I have made this many times and usually I cook the carrots in the microwave rather than salted water. The carrots need to be soft. I have cut the sugar to about 2/3 cup and it is still plenty sweet. It can be put together earlier in the day and put in the oven an hour before serving if desired.
