Ingredients:

  • 1/2 cup brown sugar
  • 3 tbsp orange juice
  • 1 1/2 cups flour
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 cup chopped walnuts (optional- i never put this in)

Directions:

  1. Cream softened margarine with sugar
  2. Add egg, juice, dry ingredients and nuts
  3. Add grated carrots and mix well
  4. Placde in a 9 1/2 x 5 1/2- inch greased loaf pan
  5. Bake at 350 for 30 minutes, or until inserted toothpick comes out clean
  6. Serve warm or at room temperature
  7. Eat and enjoy!
