Ingredients:

Directions:

  1. Beat butter, sugar, mashed carrots and extracts together until well-blended.
  2. Combine flour, baking powder and salt. Add to creamed mixture, and mix well.
  3. Stir in nuts and raisins.
  4. Drop by heaping teaspoonfuls onto a greased cookie sheet.
  5. Bake at 350 degrees for 20-25 minutes until lightly golden.
