Caramel - Pecan - Cheesecake - Bars

Ingredients:

  • 1 1/2 cups crushed--- nilla vanilla wafers (about 50 )
  • 1/4 - cup butter melted
  • 4- packages of ( 8 oz) each cream cheese softened
  • 1- cup sugar
  • 1 - cup sour cream
  • 3- tbsp flour
  • 4- eggs
  • 24- kraft caramels unwrapped
  • 1- tbsp water

Directions:

  1. Preheat oven to 325 degrees f.
  2. Line a 13 x9 baking pan with foil, with ends of foil extending over sides
  3. Remove 1/2 cup nuts and set aside......
  4. Finely chop remaining nuts; mix with wafer crumbs and butter........press onto the bottom of pan
  5. Refrigerate until ready to use
  6. Beat cream cheese and sugar in a large bowl with mixer until blended
  7. Add sour cream, flour and vanilla, mix well
  8. Add eggs 1 at a time, mixing on low speed after each just until blended............pour over crust..........
  9. Bake 45 minutes or until center is almost set
  10. Cool completely
  11. Microwave caramels and water in mircowaveable bowl on high for 1 minute or until caramels are completely melted when stirred
  12. Pour over cheesecake
  13. Top with reserved nuts
  14. Melt chocolate; drizzle over cheesecake
  15. Refrigerate for 4 hours
  16. Use foil handles to remove cheesecake from pan before cutting to serve
  17. Makes 32 or less servings depending on size cut.........
