Caramel Macadamia Nut Ice Cream

Ingredients:

  • 1/4 cup butter cut into small pieces
  • 1/2 cup half-and-half
  • 1/4 tsp salt
  • 2 eggs
  • 1/4 tsp salt
  • 2-1/2 cups half-and-half
  • 1 tsp vanilla

Directions:

  1. To make caramel sauce pour sugar into small heavy pan.
  2. Place over medium heat and let sugar melt to a dark brown liquid.
  3. Stir in butter and half-and-half then stir over medium heat until mixture becomes a sauce.
  4. Stir in salt then remove from heat.
  5. In heat proof bowl beat together eggs and salt then set aside.
  6. In heavy bottomed pan combine sugar and half-and-half then bring to a simmer.
  7. Pour 1/2 cup of the mixture into egg mixture and beat.
  8. Return mixture to pan and cook slowly over low heat until thickened to sauce consistency.
  9. Remove from heat then stir in vanilla and strain into a bowl then cover and refrigerate until cold.
  10. If caramel sauce is too thick to pour microwave on low 30 seconds.
  11. Make ice cream according to manufacturer's directions.
  12. While ice cream is still soft but almost firm drizzle in caramel sauce and nuts.
  13. Continue to churn ice cream just to mix ingredients then remove from machine and freeze.
