  1. Preheat oven to 350 degrees. Grease and flour a loaf pan.
  2. In large bowl, blend the egg, applesauce, 1/4 cup of the melted butter, brown sugar, and vanilla with an electric mixer on medium speed. Combine the flour, baking powder, baking soda, salt and cinnamon. Add to the wet mixture and beat until just incorporated. Stir in the Skor bits. Scrape into the pan and bake for 35-40 minutes, until the center of the loaf springs back when lightly pressed.
  3. Meanwhile, combine the coconut, sugar, and remaining 1/4 cup butter. Spread mixture over the hot loaf immediately after removing from the oven, then return to the oven for 10-15 minutes more, until the topping bubbles and starts to brown. Immediately after removing from oven, run a sharp knife around the edges of the pan to keep the loaf from sticking. Let cool for 10-15 minutes, then remove from pan cool on a wire rack.
