Caprese Pasta Salad

Ingredients:

  • 1 lb penne pasta (this can be increased if you have many guests, or decreased if you want more intense flavour.
  • 6 ripe roma tomatoes , insides removed (cherry tomatoes will work, but it is more labour intensive to remove the insides.)
  • salt and pepper to taste

Directions:

  1. Boil pasta per instructions on package.
  2. While pasta is boiling, cut tomato, salami, and mozarella into bite-sized pieces.
  3. When pasta is cooked, drain and coat lightly with extra virgin olive oil or butter.
  4. Add all ingredients to pasta, toss, and serve warm.
