Ingredients:

  • 4 carrots , cut into 1/4 inch slices
  • 1 large potato , cut into 1/4 inch slices
  • 4 oz bacon , cut into 1/4 inch pieces
  • 1 tbsp olive oil
  • 2 tbsp maple syrup
  • 3 cups corn

Directions:

  1. Cook carrots and potatoes in boiling salted water until done; drain.
  2. Fry bacon until golden.
  3. Add olive oil to 1 tablespoon bacon drippings and cook onion 10 minutes over medium low heat.
  4. Add maple syrup and cook 5 minutes.
  5. Stir in corn, bacon, carrots and potatoes and season to taste. Cook until warmed through.
