Ingredients:

  • 1 medium onion, chopped
  • 2 tbsp oil
  • 1 (13 3/4 oz) can chicken broth
  • 1 large red peppers (or combination of all 3) or 1 large green peppers (or combination of all 3) or 1 large yellow pepper, sliced into thin strips (or combination of all
  • 1 1/2-2 tsp chili powder
  • 1/4 tsp paprika
  • 1 1/2 cups minute rice

Directions:

  1. Cook onion in oil till tender but still opaque.
  2. Add broth, pepper strips and seasonings.
  3. Bring to a rolling boil; stir in rice.
  4. Cover and remove from the heat.
  5. Let set for 5 minutes.
  6. Fluff with a fork.
